Ingredient List:
1 cup quinoa
2 cups water
1/2 tsp salt
1/2 red onion, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 cucumber, chopped
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup olive oil
2 tbsp lemon juice

Instructions:
Rinse the quinoa in cold water and drain well.
